Squash Casserole

  • 4 cups cooked squash, drained
  • ½ cup Duke's Mayonnaise
  • ½ can cream of chicken soup
  • 2 cups mozzarella cheese, grated
  • 1 small onion, chopped, optional
  • 2 eggs
  • Stuffing mix
  • ½ stock margarine, melted


Cook squash and onion until done, drain well and mash. Combine with mayonnaise, eggs, cheese and soup. Pour into Pam sprayed 9×9" baking dish. Layer top with dressing mix and pour margarine across top. Bake at 300°F for 1 hour.
