Grilled Goddess Zucchini

Green Goddess Dressing:
1. In a food processor or blender, combine all dressing ingredients, season with salt and pepper, and blend until smooth.
1. Slice zucchini into thin strips lengthwise. Toss with olive oil and season with salt and pepper.
2. Heat grill or grill pan to medium heat and add zucchini. Grill 4-5 minutes per side, until charred and tender.
3. Spoon sauce over zucchini and garnish with parsley leaves.
