  • Two slices crusty batard or ciabatta bread
  • 2 Tbsp. Duke's Light Mayonnaise with Olive Oil
  • Grilled slices of eggplant, zucchini, and yellow squash
  • Thin slices of red onion
  • Thin slices of mozzarella cheese
  • Slices of roasted red pepper
  • Several leaves of baby arugula


1. Spread Duke’s on each slice of bread.

2. Place arugula leaves on bottom slice, layer remaining ingredients and top with second slice of bread.
