Duke’s Cheesy Rice Casserole

Ingredients

  • 1 lb. loose sausage, mild or hot
  • 1½ cups white rice
  • 1 large jar diced pimento
  • 8 oz. sharp cubed cheese
  • ¾ cup Duke's Light Mayonnaise
  • ⅓ cup skimmed milk
  • 1 can cream of mushroom soup

Preparation

1. Cook and drain sausage.

2. Steam rice.

3. Spray casserole dish with cooking spray.

4. In large bowl, mix all ingredients together. Add dash of salt / pepper to taste. Pour in casserole dish.

5. Bake at 350°F for 40 minutes.
