Duke’s Cheesy Rice Casserole

  • 1 lb. loose sausage, mild or hot
  • 1½ cups white rice
  • 1 large jar diced pimento
  • 8 oz. sharp cubed cheese
  • ¾ cup Duke's Light Mayonnaise
  • ⅓ cup skimmed milk
  • 1 can cream of mushroom soup


Cook and drain sausage. Steam rice. Spray casserole dish with cooking spray. In large bowl, mix all ingredients together. Add dash of salt / pepper to taste. Pour in casserole dish. Bake at 350°F for 40 minutes.
