Vegetarian Bell Pepper Quesadilla

Bell Pepper Quesadilla


  • 8 medium flour tortillas
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 Tbsp. butter
  • 1 cup shredded white cheddar cheese
  • 1 cup shredded yellow cheddar cheese
  • ½ cup Duke's Mayonnaise
  • ¼ tsp. ground cumin
  • ¼ tsp. paprika
  • Dash hot sauce
  • Nonstick cooking spray


1. Dice the green and red peppers into bite sized pieces.

2. In a skillet, melt the butter. Add the peppers and sauté until translucent, about 8 minutes.

3. Transfer the peppers to a bowl. Add the cheeses, Duke’s, spices and hot sauce. Stir well.

4. Divide the mixture evenly among 4 of the tortillas.

5. Top with the remaining tortillas.

6. Spray a skillet with nonstick cooking spray.

7. Cook the quesadillas one at a time over medium high heat until the cheese is melted.

8. Cut the quesadillas into triangles using a pizza cutter.

  1. I made this super simple recipe for my family last night and it was a huge success. Even my picky five year old (that claims to not like tortillas) loved it. I followed the recipe as suggested with two alterations. I added about 1.5 cups of chopped rotisserie chicken and only used 1.5 cups of cheese because that’s all I had on hand. Congrats on a great recipe, Duke’s!
