Baked Potato Salad

Ingredients

  • 2 pounds red potatoes, cut in half
  • 2 Tbsp. apple cider vinegar
  • ½ cup chopped red onion
  • ¾ cup Duke's Mayonnaise
  • ¼ cup buttermilk
  • ½ tsp. black pepper
  • ½ tsp salt
  • ¼ tsp. paprika

Preparation

1. Preheat the oven to 400°F.

2. Boil the potatoes in salted water until they are just fork tender.

3. Drain the potatoes and return to the pot. Add the remaining ingredients and mix well.

4. Lightly smash the potatoes with a potato masher.

5. Transfer the mixture to a greased baking dish.

6. Bake for 20 minutes.
